Super excited to share this recipe with you! One of the influencers I follow makes salmon bowls and I thought “I bet these would be delicious with shrimp!” And delicious doesn’t even begin to describe these bowls. I literally crave them.
To make them keto I replaced the rice with cauliflower rice. The secret to cauliflower rice is to cook it until it’s a little browned. Another secret is to add green onion for an additional flavoring. It’s honestly amazing on it’s own so it serves as a really good base to this bowl.
The Kimchi Mayo can be found at your local Whole Foods or organic grocer. Same with the soy free soy sauce. I find soy to be extremely bothersome to my stomach so I avoid it at all costs. Kimchi can also be found at your local grocer like Whole Foods or Sprouts. It has such a unique flavor and I love it! Think sauerkraut but spicy!

Shrimp Kimchi Bowls
Ingredients
- 1.5 cup cauliflower rice
- 10 shrimp
- 1/4 cup kimchi
- soy free soy sauce
- 1/2 avocado
- 2 tbsp kimchi mayo
- sriracha
- salt
- pepper
- extra virgin olive oil
- green onion
Instructions
- brown cauliflower rice in pan on medium to medium high heat along with soy free soy sauce, olive oil, salt, and pepper
- add kimchi mayo and green onions to rice mixture
- half and dice your avocado
- push rice aside in pan and add shrimp – saute until shrimp are fully cooked
- pour rice and shrimp in bowl
- add kimchi on top along with avocado pieces
- drizzle kimchi mayo and sriracha on bowl
- enjoy with chopsticks
