Roasted Carrots

This is a favorite side dish. I absolutely love multi-colored carrots. They are beautiful! And they honestly taste super sweet. I would compare them to having the taste of a sweet potato but with far less carbs.

Roasted Carrots

Course Side Dish

Ingredients
  

  • carrots
  • 1 tbsp olive oil
  • 1 tbsp kerrygold unsalted butter
  • salt
  • pepper
  • garlic powder

Instructions
 

  • Preheat oven to 425
  • Rinse carrots and peel if needed
  • Cut carrots in half length wise and again width wise
  • Place carrots in a bowl and toss in olive oil, salt, pepper, and garlic powder
  • Place carrots in single layer on baking sheet
  • Bake for 15 minutes
  • Toss Carrots
  • Bake for another 5-10 minutes

Notes

Carbs : 2 grams per carrot
