This is a favorite side dish. I absolutely love multi-colored carrots. They are beautiful! And they honestly taste super sweet. I would compare them to having the taste of a sweet potato but with far less carbs.
Roasted Carrots
Ingredients
- carrots
- 1 tbsp olive oil
- 1 tbsp kerrygold unsalted butter
- salt
- pepper
- garlic powder
Instructions
- Preheat oven to 425
- Rinse carrots and peel if needed
- Cut carrots in half length wise and again width wise
- Place carrots in a bowl and toss in olive oil, salt, pepper, and garlic powder
- Place carrots in single layer on baking sheet
- Bake for 15 minutes
- Toss Carrots
- Bake for another 5-10 minutes
