Keto Chicken Tikka Masala
Ingredients
- 1.5 lbs chicken thighs chicken marinade
- 1/2 cup greek yogurt (or dairy free alternative) chicken marinade
- 2 tbsp lemon juice chicken marinade
- 6 cloves garlic chicken marinade
- 1 tbsp ginger chicken marinade
- 2 tsp cumin chicken marinade
- 2 tsp garam masala chicken marinade
- 2 tsp paprika chicken marinade
- salt chicken marinade
- 3 tbsp olive oil or kerrygold grassfed butter sauce
- 1/2 red onion sauce
- 2 tbsp ginger sauce
- 6 cloves garlic sauce
- 2 tsp cumin sauce
- 2 tsp tumeric sauce
- 2 tsp coriander sauce
- 2 tsp paprika sauce
- 2 tsp chili powder sauce
- 2 tsp garam masala sauce
- 1.5 can tomato sauce sauce
- 1/4 cup water sauce
- 1 cup heavy cream or non dairy cream sauce
- fresh cilantro
- cauliflower rice
- 1 tbsp grassfed butter
- salt
- pepper
Instructions
- slice chicken into bite sized pieces
- stir chicken, yogurt, lemon juice, garlic, ginger, salt, cumin, garam masala, and paprika together until chicken is fully coated
- cover and refrigerate – over night is best but an hour will be okay
- cook chicken on medium high heat until browned but not fully cooked
- remove chicken from pan and set aside
- heat oil on pan for sauce
- saute onion, ginger, and garlic until tender
- add seasonings and stir until fragrant – for about 30 seconds
- stir in tomato sauce and water
- bring to a boil
- add cream
- add in chicken until fully cooked
- let sauce simmer
- brown cauliflower rice on pan with grassfed butter, salt, and pepper
- serve chicken tikka masala over cauliflower rice
- garnish with fresh cilantro
