Keto Buffalo Wings

These keto buffalo wings are as good, if not better than traditional wings! And I can promise that. I found this recipe online and made it my own and I have to say I'm a raving fan. You feel like you're indulging, but you're not.

Ingredients

  • 2 lbs chicken wings
  • 2 tsp baking powder (not to be confused with baking soda)
  • 2 eggs
  • salt
  • pepper
  • buffalo sauce
  • 1/4 cup kerrygold unsalted butter
  • celery sticks (optional)
  • carrot sticks (optional)
  • paleo ranch (optional) 

Directions

  1. Preheat oven to 400 degrees F
  2. Crack eggs into a large bowl and whisk until smooth
  3. Add wings to eggs and cover evenly 
  4. Add baking powder, salt, and pepper to bowl and cover evenly
  5. Arrange the wings on a baking pan into a single layer and bake for 30 minutes
  6. While the wings are baking add the butter and buffalo sauce (we are loving the Whole Foods mild buffalo sauce) to a pan on low heat until the butter is melted
  7. Take the wings from the oven and toss them in the butter mixture
  8. Arrange wings back on the backing pan into a single layer and bake for another 15 minutes
  9. While the wings are baking you can cut your celery and carrot sticks and place your buffalo sauce and paleo ranch into sauce bowls for dipping
  10. Once the wings are done baking turn your oven on broil for about 3 minutes for extra crispiness
  11. Take them out of the oven, let them cool for a minute or so, plate and serve

What’s better than ending a full day of mountain biking, chasing kids around, or even sitting at a desk all day long than with wings & beer?  While I can’t promise anyone that the beer is happening the keto buffalo wings definitely are!

Instead of frying we use baking powder and bake the wings for a healthier alternative. If you’re looking for that crispy consistency adding inthat last couple of minutes of broiling helps a lot too!
