A go to energizing breakfast. I like to think of food as fuel and this one really gets me going for the day. Organic cage free brown eggs are recommended. When purchasing organic meats and eggs it’s really about focusing on what the animals are being fed. Whatever they are being fed will transfer into what you’re putting in your body and it’s best to keep it clean and free of antibiotics, pesticides etc.
This recipe is great with a side of smashed avocado. I like to dip my bacon in the avocado as if they’re “bacon chips”.
Eggs Over Easy & Bacon
Ingredients
- 2 slices bacon
- 2 eggs
- salt
- pepper
- garlic powder
- Salsa optional
- Siracha optional
Instructions
- Take bacon and place on pan at low medium heat
- I like to cut the bacon in half for smaller strips
- Place them on the pan so they aren't touching each other
- Bacon cooks best at a lower heat so be patient
- When the bacon starts to curl flip to other side
- Set bacon aside on paper towel to remove excess grease
- Turn heat to around medium and leave bacon grease in pan to cook eggs with
- Gently crack eggs into pan careful not to break them
- Season with salt, pepper, and garlic powder
- About 2 minutes or until the egg white is almost set carefully flip the eggs
- Before flipping you can use your spatula to cut edges off the eggs if they are connected
- Cook for about 30 seconds and transfer to plate
- Top plate off with salsa & siracha
